Duck Beer!

Goose Island makes a pretty good beer called Honkers Ale.  I like to call it “Duck Beer”.  This is one of my favorite everyday beers, so I decided to make it myself.  The book Beer Captured by Tess and Mark Szamatulski has a recipe for a “clone” version of Goose Island’s Honkers Ale and I made it with my ingredients this past weekend.  The only difference was my Northern Brewer hops (6.6% AA) were a bit low on Alpha Acids than the recipe (8.5%) so I added .25 oz. to make up the difference.

I made a starter from a pouch of very old (1 year) Wyeast 1968 London ESB and mixed with a pouch of fresh Wyeast ESB yeast at pitching time.  Fermentation went off without a hitch and has now settled a bit.  I can only assume the evidence of standard fermentation.

I’ll be bottling the IPA this weekend and flavoring half of the mead with a peach extract.  Yay!
